ABOUT WHALEBONE BREWING Co.

Located in the remote town of Exmouth WA, the gateway to the Ningaloo Reef, Whalebone Brewing Company offers a quirky, rustic, laid-back vibe with a touch of nostalgia.

Owned and operated by two local families with a love of craft beer who wanted to bring beer back to what it should be; a great, refreshing, true to style brew enjoyed with mates and family in an authentic setting under the stars.

Complemented with delicious pizza showcasing local ingredients, a kids play area and great tunes by local and travelling musicians, Whalebone Brewery is the place you can kick off your boots (or thongs!) after a day of exploring the Ningaloo reef and range.

With all beers brewed on-site and our own “Ningaloo Spirits” now distilled on-site too, we like to say that Whalebone is ‘The taste of Ningaloo’.

SESSION ALE - 3.8% - 16 IBU

Bittered with a combination of America & Australia’s finest hops, our Session Ale tips a hat to Exmouth’s American roots and Aussie resilience. With a gentle bite, this golden brew will soothe sunburnt lips and crack the salt crust off your cheeks after a long day on the water. Pale Malt, Vienna, Galaxy and Simcoe Hops also feature.

Flavour profile: Low malt flavor, low to medium bite from the galaxy hops

 Aroma: clean and slight aroma with fruity (passionfruit) esters present

Appearance: Golden yellow with slight haze and a nice foam head

Mouthfeel: High carbonation with light to medium body

Easy drinking refreshing pale ale style with low alcohol

LIGHTHOUSE Lager - 4.6% - 12 IBU

Crafted with summer in mind, this pale brew is deliciously smooth. Featuring pale malt, flaked corn and Tettnanger Hops, it’s perfect for drinking ice cold every day. Here’s ‘cheers’ to beach days and balmy nights!

Flavour profile: Neutral and clean with a slight sweetness from corn, no hop flavour

 Aroma: No hop aroma, slight aroma of corn

Appearance: Pale straw colour with foam head that doesn’t persist

 Mouthfeel: Very light bodied

Very refreshing and thirst quenching  when very cold

Hone Kujira - 5.4% - 16 IBU

An international pale rice lager, this crispy boy is crafted with ale malt, Munich and rice flakes and delicately hopped with Green Bullet.

The Hone Kujira is a mythical Japanese yōkai (ghost, phantom, or strange apparition) from western Japan. It is described as being a skeleton whale that is accompanied by unknown fish and weird birds. It takes its revenge against people who hunt whales or eat whale meat, and does so by cursing them with plagues and fire.

Flavour Profile: Moderate level of bready malt flavour mainly from the Munich malt. Slightly malty with low bitterness.

 Aroma: Medium malt aroma. Low hop aroma.

 Appearance: Golden and crystal clear. White creamy head.

 Mouthfeel: Medium body and moderate carbonation

 A crispy and very refreshing pale lager

 

Pale Y’All - 5.8% - 35 IBU

American Strong style Pale Ale

Flavour profile: High hop flavour with bold tropical and stone fruits coming through. Malt flavour is low- medium

 Aroma: Strong hop aroma from Necteron hops. Tropical fruit, citrus and stone fruit is evident.

 Appearance: Pale golden hue and slightly hazy. Good head retention.

 Mouthfeel: Medium body with smooth finish.

 A pale refreshing and hoppy ale. Clean hop profile with lively tropical flavors.

HAzy bone neipa - 6.6% - 25 ibu

Generously hopped with Galaxy, Mosaic, Simcoe and Ekuanot hops, this IPA is flavour and aroma focussed with a smoother finish than traditional IPAs. Opaque in appearance, it bursts with fruity aromas of grapefruit, lemon, pawpaw and mango. Pilsner & Vienna malts and flaked oats combine with Galaxy, Mosaic, Simcoe, Eukanot and Mosaic Hops.

Flavour profile: Very high hop flavor. Citrusy, stonefruit and paw paw flavours evident. Low bitterness and low malt flavour

 Aroma: Intense fruity aromas – tropical and citrus

 Appearance: Very cloudy pale colour. Low head retention

 Mouthfeel: Medium bodied, with some alcohol warmth

 An intensely flavoured but easy drinking IPA style without the bitterness

barracuda - 5.1% - 30 ibu

American Brown Ale

Flavour profile: Medium malt sweetness with slight chocolate and toasted flavours. Medium bitterness and dryish finish. Medium fruity hop flavour

Aroma: malty sweet with chocolate and slight toastiness on the nose. Some aroma from the fruity hops is also evident

Appearance: Dark brown hue that is clear. Good persistence head retention

Mouthfeel: Medium bodied and moderate carbonation

A malty but also hoppy beer with chocolate and toasty flavors that compliment the fruity hops.

 

squid ink stout - 5.8% - 37 ibu

American Stout, Medium bodied with a subtle character to offset the malty, bittersweet chocolate and espresso finish

 Flavour Profile: High roasted malt flavours with coffee and chocolate evident. Low malt sweetness with slightly dry finish. Medium bitterness.

 Aroma: Strong aroma of roasted malt. Low hop aroma.

 Appearance: Black. Light tan foam head.

Mouthfeel: Full body, creaminess from the use of oats. Medium carbonation.

A strong, roasted and bitter and hoppy stout. More hop character than typical stouts

big bone ipa - 7% - 55 ibu

West Coast IPA, Hops are the star of the show here!

Flavour profile: High hop flavor with strong citrus, pine, resinous and tropical flavours. Med-high bitterness and low malt flavour

Aroma: Prominent hop aroma of citrus and tropical fruits from dry hopping

Appearance: Light golden hue and clear. Medium foam

Mouthfeel: Medium bodied and smooth. Medium-high carbonation with low astringency from hops. Warming alcohol feel

A wonderful complex, bitter beer with bold fruit flavours

lago ipl - 5.4% - 48 ibu

India Pale Lager, Aussie pale malt and a touch of Vienna Malt are just the beginning of your journey into a ocean of flavour.  Generously hopped with El Dorado and Strata hops your tastebuds will be carried away by a raft into a tropical horizon that you wont want to leave

Flavour Profile: Bright tropical with high fruit flavours evident. Low malt flavor. Clean lager profile.

Aroma: Moderate fruity aroma with some tropical and citrus present (grapefruit, pineapple)

Appearance: Pale straw colored and clear. White head with ok retention

Mouthfeel: Medium body and moderate carbonation

A smooth and flavorful IPL that has the hoppiness of an IPA but smoothness of a lager

 

spyhop GINGER BEER - 2.5%

'Spyhopping' is the term to describe a whale vertically sticking its head up out of the water. You can spot this in Exmouth in the winter. Chances are you’ll be spotted sticking your hand up for another Spyhop Ginger after this one too! The ginger bite paired with a hint of chilli, lemon & spices make this an all-year and all-day drink.

Flavor Profile: Spicy ginger beer with delicate sweetness and mild chilli hint

 Aroma: Gingery and sweet

Appearance: Cloudy with zero head retention

Mouthfeel: Lightly carbonated and easy to drink

Spicy and refreshing with low alcohol

skinny dip seltzer - 4.5%

This big, juicy Passionfruit-Mango Seltzer looks like sunshine in your glass and is as refreshing as a skinny dip in the ocean. Created with all natural ingredients including locally sourced fruit from the Gascoyne region – and with no added sugar - it’s gluten free, preservative free and guilt free. Dive in!

Flavor Profile: Made with soda, Ningaloo vodka and Carnarvon Mango and passionfruit puree.

 Aroma: Strong mango scent

 Appearance: Ranges from pale yellow to bright yellow, depending on the keg.  Zero head retention.

Mouthfeel: Juicy with moderate carbonation,

Premium pressed apple cider with a sweet bubblegum flavour… this is a crowd fave!

 

Moby IIPA - 8.5% - 84 iBU

ABV 8.5% IBU 84

This Double IPA will rock your boat. An ocean of pale malt with a sea mist of crystal forms a whale size backbone that supports the heavy muscle of US hops. A DDH sets you up for a second strike with a tropical thud that will leave you clinging to your first mate, smiling.

Flavour Profile: Firmly bitter with piney and resinous American hops.  Light caramel malt.

 Aroma: Piney aroma with fruity notes

 Appearance: Light amber with pale creamy head

 Mouthfeel : Medium body, moderate carbonation, warming alcohol feel.

 Pale malt with a big tropical hit that packs a punch

Bones XPA - 5.5% -31 IBU

A crisp, refreshing, light coloured extra Pale Ale made with NZ Nectraron hops
